    Is there a way to desynth things in my various armor/weapon inventories in the armoury chest?

    Yes, there is.
    You can activate the desired desynthesis targets on Crafting -> Desynthesis tab under Search In group. There is a dedicated option for armoury chest.

    But please be careful with name settings you specify, because you may accidentally desynthesize gear that was required for another job.
